If you are like me I have cooked more of my meals at home since the world changed! This hasn't been a complete change though; I have always loved cooking! I just have more of my evenings and weekends to cook even more dishes. However, like a lot of people, I have been working full-time from home since March 2020 and I don't always have time to make fireworks. I just want some good food in me, quick! Join me exploring quick meals, treats, but also special dishes I enjoy taking my time to cook.

Spiced Lamb Chops with Sweet Potato Fries (Quick recipe)
Homemade food is so exciting and gives you all the freedom to make it yours. Lamb is such a lovely meat to cook and eat, so tender and spiced with a variety of herbs and spices does bring the flavours out. Super quick and simple for weeknights or a weekend dinner. This is definitely a treat, and you will absolutely come back to this time after time.

Jamaican spiced Salmon, Asparagus & spring onions Champ
This seafood spiced salmon, potato mash served with vine cherry tomatoes, onion and apple chutney sauce and asparagus. So little steps and great for quick mid-week dinner, using an air fryer (optional), pan and pot. Easy to meal prep which allows for flavorful salmon and stores perfectly in the fridge for up to 4 days.

Traybakes are easy for a crowd or portion for weekdays breakfast options. Apple, almond and cinnamon is such as amazing combination. With no flour and minimal sugar is a great option to the norm and you do not need to be a professional baker to have this goodness.
If you are a cake lover and want to have a healthier option then this is it! Better still its easy baking and stores well in small containers for grab and go options or in a larger Tupperware for serving yourself 1 or 2 at home. I totally enjoy working from home and all the flexibility it brings, the non-commute is totally a time saver! With apples in season and the colder months ahead, this a perfect pick-me up for the autumn mornings. Lovely, sweet apples and almond flavour with a hint of cinnamon to warm you from the inside.

Celebratory Nigeria Native Oil Rice (bulgur) with grilled fish
Nigerian Native Jollof rice also known as palm oil rice is an easy dinner option to have in the recipe books. It is spicy and full of flavour bringing amazing aromas to the kitchen. This is a little bit of home for my husband and I and now that I have the recipe tried and tested to our liking I have decided to share. It is originally from the southeast of Nigerian, but it enjoyed by many other regions. My husband loves crayfish and so this is one meal that goes down a treat. Easy steps to follow and a flavourful meal on the table to enjoy during the week with family. Marinating and grilling your fish beforehand reduces the steps done at once, either way I hope you enjoy!

It's almost the end of February, pancake's on a Tuesday is definitely a treat. I love pancakes and have this almost every weekend, making loads to freeze and treat ourselves during the week too. There are so many ways to make pancakes and ingredients which can be swapped to make it your own. One of those being pancakes with an extra bit of protein from Greek yoghurt, mixed seeds and eggs which leave you feeling fuller for longer. Whether you like a sweet or savoury pancake option, this easy to follow recipe gives you a delicious treat for your go to treats - breakfast, dinner or snack!

Quick lunch option easy to meal prep for the work week. Cauliflower rice is a surprisingly filling lunch with no carbs in sight! I love this option as it is a great way to get plenty of those veggies into the body. It is also packed with so much flavour, it will become a quick go to for meals during the week.

Italian Herby Salmon Burger with Chilli fries
These Salmon Burgers are top level burgers. The simplicity to make but absolute deliciousness makes you do the "happy food dance". One bite and you are hooked, its so funny that I absolutely hated fish up to only a few years ago! The Italian aromatic and herby flavours with optional dash of chilli is all you want without knowing. Basil, thyme, parsley, oregano, sage as the base with spices including black pepper, chilli, sea salt makes the best pairing. For fries you can use premade and spice with chilli powder or make yours, whichever you go for I recommend chilli fries to contrast with herby salmon burgers. These are lovely flavoured burgers are a good surprise to the taste pallets for all those you choose to share with. I hope you love the variety of flavours I share and make cooking (&eating) so much fun. This is one of them, spicy, herby, delicious, and super quick to make. This will take off all the stress but allow you to share something different.
