If you are like me I have cooked more of my meals at home since the world changed! This hasn't been a complete change though; I have always loved cooking! I just have more of my evenings and weekends to cook even more dishes. However, like a lot of people, I have been working full-time from home since March 2020 and I don't always have time to make fireworks. I just want some good food in me, quick! Join me exploring quick meals, treats, but also special dishes I enjoy taking my time to cook.

Fiery Chinese spiced beef sauce with Wild basmati rice

Fiery Siracha, honey and Chinese spice is a great combination for a stir fry or sauce to serve with Wild basmati or Jasmine rice. This spicy sauce is super to create with whatever veg and protein you have in the fridge. I usually have a few vegetables like mangetout, carrots, and onions. I sometimes have left over boiled beef and use this in stir-fry, alternatively you can use stripped pieces. What makes this so delicious is the sweet and spicy combination and how versatile this is to use up vegetables and brighten up your plate. These Asian spices and ingredients will become staples in your cupboard if they aren't already, as they will be used in flavourful and easy cooking. As always, another super quick to cook and a good option for either packed lunch or dinner for an individual, couple, or larger group. Can be served on its own as a meal or with some prawn crackers.

It’s almost Christmas day, so the countdown begins! I love Christmas because it is a wonderful time to spend with family and friends. It is great for the weekend or work lunch as well as it can be prepared in advance. This is made in one pot, less stress and cleaning up to do and can be served with a piece of bread or on its own. This is definitely a stew with a lovely blend of spices with some heat, but you can always up or lower the heat to your taste.
