Introduction

An easy meal to prepare ahead of time for a glorious BBQ, weeknights, lunch or dinner. This lemony and spicy chicken can be served with a variety of sides from boiled potatoes or rice or simply on a bed of salad! Packed with flavour when left to marinate for a minimum of 4 hours but even better the next day. Simply pop in the oven when ready for 30 - 35mins and you get crispy skin-on chicken thigs. I have also used chicken wings which taste just as good and make a great addition to the BBQ spread. Try this lemon and yellow mustard chicken recipe and it will definitely be one of your favourites!

Steps

  • Mix the marinade ingredients in a bag of large bowl 

  • Score the chicken skin and poke the meat 

  • Add the chicken to the marinade (set in fridge if doing ahead)

  • Add casserole veg mix (can be found in the frozen aisle of any supermarket)

  • Place chicken in an oven tray with the mixed veg

  • Cook chicken in the oven at 200c degrees for 30- 35mins

  • Serve with your choice of sides

How to make

For the marinate, make the lemon and mustard marinade. In a bowl mix the lemon’s juice (zest if you like), yellow mustard, whole mustard seeds (more if you want it to be exact spicy), honey, salt & black pepper to taste, paprika, olive oil. Grate in the peeled garlic cloves and sprinkles of dried chives and chilli flakes in a large bowl or freezer bag. I like to also sprinkle some chilli flakes and chives on the chicken skin when it’s put in the oven tray.

Clean the chicken, score the skin and poke from the back into the meat so it totally absorbs the flavour. Just add smaller quantities at a time to the bowl and taste as you go along if you are not sure on the quantities I've used. Cooking can be customised so never be afraid to increase or reduce things to your liking. Add the chicken into the marinade and allow to sit in it for 4 hours to overnight for maximum flavour.

If using some vegetables (casserole mix) add this to the chicken when popped in the oven tray. Bring the chicken out and place in an over tray scattering the vegetables in the pan. Place the tray in an oven as 200c (fan) and set a timer for 35mins. In no time the chicken is ready! An extra bonus is there is a thin sauce in the tray which can be used as salad dressing, or on some boiled rice or potatoes!

The chicken is ready when the juices run clear (73c degree). Serve a piece of chicken with your choice of sides and enjoy!
