Introduction
Last week of summer and a bank holiday! What better way to celebrate the gentle summer sun with some lovely homemade ice cream! Non-churn ice cream is so simple and quick to whip together (pun intended). Strawberries are a delicious summer fruit to enjoy over summer and a way to extend the yumminess is making lovely homemade strawberry ice cream. Sweet strawberry goodness with pistachio is a combination you never knew you needed but will totally fall in love with it. With a few ingredients and an electric mixer, you are ready to go. This can made into ice cream to serve in cones or in ice cream moulds of all shapes and sizes! Enjoy your ice cream and happy August bank holiday if you’re lucky enough to have the time off 😃🍨🍧

Steps
Whisk Double cream and condensed milk into soft peaks and set aside
Add the vanilla extract and salt
Gently add in the chopped pistachios, strawberry jam, sliced strawberries
Spread evenly in the mixture and pour into your container choice
Scatter optional toppings if using
Seal and allow to freeze for minimum of 6 hours
Allow to sit on the kitchen counter for up to 5 mins and serve with an ice cream scoop!

Strawberries and cream are a great combination and one of the highlights of the summer fruits on offer! Its the summer bank holiday and thankfully the sun has graced us with its presence. What better way to enjoy the lovely sweetness of strawberries than homemade ice cream? It so delicious you will try to make more and store to enjoy for a few weeks to come. Down south visiting family and attending BBQs, it does not take much to please me - but this is what I love, family & friends time ❤ I hope you are able to find some delicious strawberries to make this as it does add an extra level of amazingness to the ice cream. However, I find very good quality strawberry jam does the trick too - as you'll see I used it in this recipe. If you are becoming a regular visitor to my blog, thank you. Fun fact - as a child I pretty much hated anything strawberry flavoured as it just tasted weird to me. But now I couldn't get enough, just ask anyone close to me and they will let you know. I think I go out of my way to find new ways to enjoy strawberries - this is a definite winner in my books! How to make
To start, you will need a stand or an electric hand mixer to whip the double cream and condensed milk into soft peaks for about 5mins on high speed for 3 mins and about 2 mins on medium. On my Kenwood stand mixer this is a 5 and then 3 setting. Into this, add your vanilla extract and salt, whisk for a minute. This should be airy and slight medium-peaked to form a peak shape when you pull the whisk away from the bowl.
Chop or crush your pistachios and slice your fresh strawberries for adding into the mixture. Once the peaks are achieved, add in the strawberries and pistachio and gently add in the strawberry jam to create streaks through the cream. The fresh strawberries give it chunks to bite into and the jam has added sugar already. You do these 2 steps to add air and enhance the creaminess of the ice cream.
Then pour into an airtight container or ice cream mould anything that is freezer proof is fine and can be sealed tight. This is to make sure it doesn't have any icicles forming though the ice cream. For extra decoration, scatter optional toppings or any combination. Seal and allow to freeze for minimum of 6 hours, making sure the bowl touches the bottom of the drawer.
Once it is ready, allow to sit on the kitchen counter for up to 5 mins, serve and enjoy!
- Double cream - 450ml
Condensed milk - 397g (1 can)
Vanilla extract - ½ tsp
Wild Strawberry jam - 200g
Fresh Strawberries - 10 sliced
Roasted Pistachio - 100g or more, chopped, green, unsalted
Sea salt - 1/4 tsp (a pinch)
Optional Toppings - Crushed pistachio
