Vanilla & Cinnamon French Toast with Frozen Blueberry Kefir (yogurt)

Introduction

It's my birthday month! I had an amazing celebration with my family and friends over the 2nd bank holiday in London. To round of the week and prepare for departure the day after my birthday - I made this lovely brunch for my husband and I. This is definitely an excellent option for late mornings or weekend brunches with only a few ingredients needed. I stayed at my sister's and simply rummaged around her kitchen to whip this up! It was too good not to share, so here you go fellow sweet tooth. The star of the show here is Aldi's Sliced bloomer bread and Yeo valley's frozen blueberry kefir (yoghurt). It gives you all the sweet kick but actually is great for you, as it's a great source of protein to boost your energy and it’s full of billions of live bacteria. So you can power on for the day or recover from the several miles of walking the whole of London (I exaggerate!) Serve you hot French toast with 1 or more scoops of your fake ice cream and enjoy the goodness on a plate with a hot or cold drink of choice.

Steps

  • Slice 4 thick slices of tiger boomer

  • Whisk eggs in a medium bowl with milk

  • Add cinnamon and vanila extract

  • Mix together and heat pan/sandwich toaster

  • Grease the cooking appliance once heated up

  • Dunk 1 bread slice at a time and put in appliance  and fry for 2 mins on each side or is golden brown on both sides.

  • Serve with your frozen kefir  and fruit of choice

Weekend breakfast/brunch is the highlight to the weekend in our house! We love to treat ourselves to something warm and sweet. This fits the bill perfectly, easy to make and well deserved after a long week! We had an amazing week in London catching up with friends and family over the 2nd bank holiday in London as it was my birthday week and hadn't seen so many people in ages! It seems like there was a competition on who hadn't seen each other the longest - trust me not from lack of trying but there has been so many moves over the years. At last my childhood classmate happened to be the winner, we hadn't seen since primary 5 - it was so good to see after so many years!

Our goal for our London trip was to see as many of our loved ones as possible, explore new places we hadn't seen and have and have a great time! This we did and we ate lots of good food along the way. I cooked twice one was this recipe am sharing and the other Yoruba red stew for my sister and her boyfriend as a thank you.

You only need a few ingredients for this and once you've bought them they will become a staple in your kitchen. Vanilla extract is used in a lot of baking recipes and cinnamon just gives a lovely warm feeling from deep within 😊

How to make


To make your lovely Vanilla and cinnamon French toast, slice 4 thick slices of bread, this is already sliced if you use Aldi's linked above. I particularly liked the thickness of this bread and trust me it absorbs a lot of the liquid so don't soak for long. Otherwise, you can get similar bread from any supermarket or bakery.

Whisk your eggs in a medium bowl and then add milk. Once combined, add maple syrup, cinnamon, and vanilla extract. Mix together and set aside.

Now for the cooking process, you can either use a sandwich toaster, as this reduces mess and also takes less time to cook as both sides are cooking at once! If that does not convince you enough, its less mess and you don't need to check on it as much! Given you have a good sandwich toaster, this is the way forward.

However, I have also cooked these on a cooker in a large pan -this was the method I used this time. This works also and the larger the pan the more you can make as once. This could be ideal if you are only making a few and want a crispier effect.

Cooking appliance/method decided - switch on your sandwich toaster or heat a pan on medium heat. Grease with butter and start to dunk your bread slices one at a time and put in your appliance (pan). Make sure to sprinkle almond flakes on for extra crisp and flavour!  Fry for 2 mins on each side or till it is golden brown on both sides.

Serve on a warm plate with your fruit of choice and frozen kefir to taste and enjoy!
