Turkey steak, Champ, and spicy Mango chutney sauce

Introduction

A quick, tasty and filling mid-week meal ready in 25mins! This is such a quick and healthy meal to make from scratch when you want something different on your plate! Cooking should be fun and it is for me through continuously changing up ingredients and/or pairing with different things to switch it up.

Steps

  • Marinate the meat

  • Cut potatoes into quarters and rinse

  • Boil the potatoes with salt & pepper

  • Chop the Spring Onions and halve the cherry tomatoes

  • Rinse Kale

  • Heat pan on medium heat and fry meat

  • Set meat aside and add sauce ingredients to simmer in pan

How to make

The key to a quick meal is - guess - multitasking! I like to say I am the 👑 queen of multitasking. If you're not, don't worry you might pick up a few tricks from me 😊


First, season your meat with chili powder, cayenne pepper, black pepper and salt. Let it sit to marinate whilst you do the next step.


Secondly, wash your potatoes and quarter them for quick boiling! Cover with water, season with salt, black pepper and 1 tablespoon of butter. Boil for 15mins and whilst this boils wash your kale, chop the spring onions and halve cherry tomatoes.


Next, heat some oil in a pan, fry your meat about 3 mins on each side till its done. Any oil of choice will do, I use sunflower or olive oil interchangebly really. Place the meat on a chopping board to slice into thick strips. In the same pan fry your halved cherry tomatoes (and optional grated vegatables) for 2 minutes, then add the mango chutney, sage, black pepper, chicken stock and chili powder to taste. Let it simmer for 2 mins and then add water to loosen up the sauce and allow to simmer on low heat for 5mins.


Now your potatoes must also be done, so add the spring onions and kale and black pepper to taste. Allow to boil till kale is whithered then drain any excess water. Return to the pan, add butter (milk if desired) and use a potatoe masher to combine the potatoes, spring onions and kale.


All done and ready to serve, place your mash first then the sliced steak pieces and finish with the sauce.
