Introduction
Sumer is in full swing, and this means more opportunities to have people round your garden! I love chicken wings and made outside on the grill with friends and family, is just heaven! An easy toss in spices and marinated overnight gives your succulent chicken wings to share! Easy for when you are hosting or to take along to a BBQ party. This spicy and delicious chicken wings are hard to resist and may just be gone in seconds. A good option on the food table this is always a treat. I hosted my first BBQ of the year a few weeks ago and this was one of the 4 options I made, it was the first to go and those tested the night before went equally as quickly lol. I have made this both on the BBQ grill but also in the oven and is lovely either way. Simply pop in the oven when ready for 20 - 25mins at 180 degrees fan and you get tasty chicken wings. Steps
Mix the marinade ingredients in a bag or large bowl
Score the chicken skin
Add the chicken to the marinade (set in fridge if doing ahead)
Place chicken in a smoked grill or in an oven tray
Cook chicken in the oven at 180c degrees for 20- 25mins
Serve with your choice of sides

I love chicken in all shapes and sizes and chicken wings are definitely one of my favourites! Hosting a BBQ or going to one this one is a crowd pleaser! Sweet, sour and spicy wings to get the taste buds excited. Simple and quick to prep and flavours to die for, this will not be on the table for long. BBQ season is here, and this is a delicious option to add to your recipe book! Enjoy with loved ones around games, conversations and music. I love garri – (coarse-grained cassava) covered with twice the amount of cold water, ice cubes and optional sugar and/or groundnuts. So, when I am trying to cool down and want a light meal, spicy chicken wings and cold Garri is the best option! You can get garri from international supermarkets or stalls catering to African cuisines. It is a coarse-grained cassava typically a Nigerian snack soaked in cold water or made with hot water into a ball (like mashed potatoes).

How to make
Clean the chicken, score the skin so it totally absorbs the flavour. For the marinade, mix olive oil (or any other oil) and the spices into a marinade, you can add chilli flakes or more Thai spice if you want it to be exact spicy. I have used various premade Thai spice mixes from Cape Herb & Spice, Schwartz, local store and specialist spice mix. Explore your local options and have a try with any! Add chicken wings to a large bowl or freezer bag and pour the marinade on to the chicken and mix. I like to also sprinkle some chilli flakes on the chicken skin when it is put in the oven tray.
Cooking is an art you can customise to your liking so never be afraid to increase or reduce things to your taste. Once the chicken is marinaded and allow to sit in it for 4 hours to overnight for maximum flavour. Whether you are making this in the oven or grill make sure you lay the chicken on one line and that you will be able to turn over halfway through cooking.
If serving with any sides, once the chicken is cooking start making the side for servings. Place the tray in an oven as 180c (fan) and set a timer for 20 - 25mins. In no time the chicken is ready! Serve with any sides you fancy from salads, fries or even garri!
The chicken is ready when the juices run clear (74 degrees Celsius). Serve your chicken wings with your choice of sides and enjoy!
