Introduction
Who knew how quick it is to make ice cream and all the possibilities of flavours this brings? Not me till March this year at least! The story behind this is I had loads of cream left over from the first birthday cake I made, and dint know what to do with it. A quick google and I realised making vanilla ice cream super quick and easy so decided to try this out!

Steps
Whip Double cream and Condensed milk into soft peaks
Gently combine salted caramel sauce
Spread chocolate chunks evenly
Pour into a airtight container or pan
Scatter chocolate shavings if using
Seal and allow to freeze for minimum of 6 hours
Allow to sit on the kitchen counter for up to 10mins and serve with an ice cream scoop!

Now this all came about because I went a bit big on the quantities of ingredients I bought for the birthday cake I made for my husband. In the fashion of not wasting food, I decided to do a bit of googling to see what I could do with the leftover double/whipping cream and salted caramel. The result is this lovely and easy to make homemade salted caramel and chocolate chunks ice cream. I have been so obsessed with salted caramel and always loved chocolate, so this was the best combination for me.
As this was made from leftovers - I did not make my own salted caramel (even though I have before) shop bought makes your life so much easier. Afterall this recipe is called super quick for a reason. So, no stress to create dessert is the best of treats!

How to make
Firstly, you'll need a stand or hand mixer to whip the double cream and condensed milk into soft peaks for about 5mins on high speed for 3 mins and about 2 mins on medium. On my Kenwood stand mixer this is a 5 and then 3 setting. Once this is in soft peaks gently combine the salted caramel sauce - note this will be a sticky situation lol. It’s okay to not be totally combined as random streaks through the ice cream makes it pretty and fun surprise when digging in!
Spread the chocolate chunks evenly through the mixture gently carefully not to overmix. Then pour into an airtight container or pan anything that is freezer proof is fine and can be sealed tight. This is to make sure it doesn't have any icicles forming though the ice cream. For extra decoration, scatter chocolate shavings - this is achieved by grating some chocolate over. Seal and allow to freeze for minimum of 6 hours, making sure the bowl touches the bottom of the drawer.
Once it is ready, allow to sit on the kitchen counter for up to 10mins and serve with an ice cream scoop!
- Double cream - 600ml
Can condensed milk - 395g
Salted Caramel/ vanilla extract - ½ tsp
Salted Caramel Sauce - 250g
Chocolate slab / chunks - 1 pack/100g
Optional - Chocolate shavings
