Introduction
Whilst at uni, I discovered this beauty - waffles and chicken. This was back in Sheffield and could never get enough but have since moved! So, I decided to go about making this for myself and fits for a Saturday brunch lunch in the garden! This was on a much sunnier birthday last year! 😂
The aroma and taste of fresh waffles is amazing and in my opinion worth the fuss! I however don't think you need to make everything from scratch, and this will show in most of my recipes! This is a special treat for me and definitely welcomed in my birthday month! 😁 🥂 to sunny days to come!

How to make
So I should say here, I made the waffles and just had Bird’s Eye Inspirations Mini Chicken Fillets in Chilli Flake Breadcrumbs tossed in the oven for about 15mins (it was my birthday after all!).
For the waffles, it is pretty easy to make the batter (similar to pancakes) so just mix all the dry ingredients first and then add in the liquids. The texture should be slightly thick so it doesn’t overspill. The measurements can be adjusted to taste and this makes 5-6 waffles. I made them in a stove waffle iron I bought from Von Chef now call Von Haus - very affordable cooking utensils there! But an electrical waffle maker also works! All that’s left to do is grease your waffle iron lightly and cook till golden brown. This roughly takes 4 minutes for each pair of waffles - no flipping required!
If serving with Bird's eye chicken fillets pop in the oven once your first batch is cooking using the package instructions. Once done switch the oven off and prop open with an oven glove or wooden spoon. Place an empty oven proof tray in and transferred cooked batches of your waffles to keep warm whilst you make more!
To serve with you can go savoury like I did with the chicken or sweet with strawberries, blueberries etc. and any syrup to taste!
