Introduction
Winter is in full motion, and this means looking for meals that warm from the inside out. There is more availability of Turkey meat in various markets and supermarkets in Leeds. This is exciting because I love turkey and this was always available in Lagos, Nigeria where I grew up. To easily access to buy more conveniently and not strictly kept to the Christmas season, I get to enjoy it in various meals. Readymade meatballs are usually more expensive and limited in stores. Making yours from scratch means more meatballs and flavoured to your liking. You'll need a few ingredients including a slice of bread or breadcrumbs, eggs, turkey mince and spices. For busier and rainier weekdays and nights, a quick, tasty and filling meal ready in 30mins with little to no mess! A few veg, spices and spaghetti and you have yourself a meal for dinner, possibly some leftovers for lunch during the week. Yet another meal to make from scratch and you can make it as spicy as you want and know exactly what’s in your food. Simply change up the spices or vegetables to make it fresh every time.

Steps
In a large bowl whisk 1 egg and all the spices
Add breadcrumbs/pieces and turkey mince and combine
Form round balls from a tablespoon worth of meat onto a oven tray
Place in the oven and allow to cook for 20mins
Boil the water for your spaghetti and cook
Chop your onions, bell peppers and into small chucks
Mince/dice your garlic and sauté the vegetable in a pan
Add your sauce such as Loyd Grossman and the meatballs for 10mins
Plate the spaghetti, sauce and any garnish of choice and sides

Simple Recipes like these that give all the flavour for little effort are exactly why I love to make my own meals. Super quick to make for a lovely mid-week or weekend meal there's so much to love about it. I love turkey and minced turkey gives me even more options to enjoy the meat in my favourite dishes. With it being even more readily available at the local market and supermarkets means I don't have to go too long to cooking with it. Turkey meatballs are an alternative to the pork mincemeat, and I like these better because I don't feel stodgy after.
I am counting down to the end of winter as it is my least favourite time of year, I really struggle to see the beauty lol, even snow is just an inconvenience for the most part - and the cold just no! I also work fulltime and like to do other things so I will take shortcuts if necessary. For this recipe the focus is the meatballs, and I would usually use a readily blended sauce, enhancing it with fresh vegetables. So, what gets me through this is the delicious and warm meals made and ate to boost my energy. I hope you enjoy this, and it becomes one of your go-tos.

How to make
For the turkey meatballs you will need a few cooking utensils and equipment including a large bowl, chopping board, pan, oven tray, whisk, knife and spoon. Parchment paper and food preparation gloves are also optional.
To make the meatballs, there are only a few steps and takes minimal effort. In a large bowl whisk 1 egg and all the spices to this crumble your bread starting with half a slice. This is for the meat to absorb the spices and juices. The meatballs will lose some liquid but will keep most of it if it has some bread crumbs in the mix. Add the turkey mince into the bowl and combine. Using a tablespoon to scoop meat in your palm, form round balls of meat and place on your lined and oil sprayed oven tray. Once all your meatballs are formed, trying to keep them as even as possible to ensure they cook well. Place in the preheated oven at 180c degrees fan add allow to cook for 20mins.
Clean up for about 10mins as you want everything piping hot at the end. Then boil the water for your spaghetti and cook to the packet instructions, usually about 10 - 12 mins. Chop your onions, bell peppers and into small chucks. Mince/dice your garlic and sauté the vegetable in a pan once your meatballs have been in the oven for about 10mins on medium heat. Add your sauce such as Loyd Grossman and the meatballs allowing to simmer on low heat for 10mins. Drain the water from your spaghetti once cooked.
Plate the spaghetti, sauce and any garnish of choice and sides such as garlic bread, enjoy!
If cooking ahead for lunch, allow to cool down and then serve into storage containers. Otherwise serve on a plate with any garnish of choice. You might want to choose easier to eat pasta such as penne if making for lunch. Reduces the splashing of sauce accidents.

- 500g Turkey mince
1 Egg
1/2 slice of bread or 50g of breadcrumbs
Spaghetti 500g (wholewheat/plain)
Red & Green bell peppers 2 (M)
Tomato Sauce of choice 700g (Lyod Grossman)
Red Onions 1 (L)
1 - 2 tsp Chilli pepper
2 tsp Paprika
2 tsp Italian herbs
2 tsp Parsley
2 tsp Freshly ground black pepper
Sea salt to taste
Chicken/ vegetable Stock 100ml
Olive oil 2 tbps
Spray oil for meatballs
Optional to garnish - parsley
