Introduction

Hello August, although it feels nothing like it! We should be getting the sun rays on tap and not the gloomy, quiet chilly and very wet days we've been having since July. But we roll, I made this as I wanted a comforting breakfast but dint want it to be heavy. Had a look round and basically figured I could make this. Yes apple is an autumn fruit and I try to write/make recipes that are in season. But as I said we've been getting October weather so let this one go!

Steps

  • Chop the apples into small chunks

  • Cream Almond butter with a splash of oil

  • Boil Apples, chia seeds, cinanmon and almond butter

  • Add all crumble ingrdients into a food processor or bowl and mix

  • Bake for up to 20mins at 180 degrees c

If you know one thing about me, I love the summer months, warm sunny days count me in! Now July and the start of August have been disappointing on that front and been quiet wet and gloomy. August 1st gave a somewhat sunny and dry day till 10pm, then it all came pouring down. Continuing the horrible July weather we've had in Ireland! I had enough at this point and wanted autumn like breakfast because I just wanted to feel the heat from somewhere and spark some excitement to my mornings. After some thinking and rummaging, breakfast apple crumble was created. This is pretty simple to make and works as a dessert like breakfast without the sugar and carb guilt after. It also happened to be a good light breakfast for my husband who had afternoon shifts this particular week, we're a 3 meals a day kind household so we swap quantities/type depending on the work week.

How to make

So this is a pretty simple recipe and you can make it in just over 20mins as there is little to no prep.

First grab a pan to "boil" your apples, then wash and chop your apples into fairly medium sized chunks or any shape you desire. the smaller they are the softer it will be. So if you want a bit of a crunch then medium size is the best. I like to chew on my food generally so I did not cut this into small cubes, but you can if you'll like. Pop the apples into your pan with the ground cinnamon spice.
With a small knife use a little splash of oil to soften the 2 teaspoons of almond butter and then add into your pan. If you want the flavour in your crumble you can add the almond butter into the food processor instead. Boil on medium heat for 5 minutes, with lid closed. To the pan sprinkle the generous amount of chia seeds to coat your apples. Take off the heat.

For your crumble you can either use a food processor or a fork. Pour all the ingredients (oats, honey, splash of water, rapeseed oil and optional almond butter from previous step). Then either pulse about 3 times till it it resembles a crumble mixture or using a fork to create the same result.

Pour your apples in a oven proof pan and then top with the crumble mixture, Bake for 18 - 20mins at 180 degrees Celsius, serve with yoghurt.

    200g Jumbo Oats
    1tsp Rapeseed oil
    50g Almond flakes
    3 tsp honey
    Splash of water
