Quick Sweet Chilli Pork Stir-fry

A quick and full of flavour work lunch or dinner option ready in 25mins. Fresh ingredients with a good portion of flavourful vegetables and made in a wok! Super easy to make and so full of sweet and spicy goodness, this is an excellent option for lunch which all your co-workers will want. Or a quick dinner for when you don’t have a lot of time. The most complicated part is the chopping up a few ingredients which anyone can handle.
This is such a quick to whip up meal and uncomplicated meal to make. This stores perfectly in the fridge for up to 3 days. Simply change up the meat or vegetables to make it fresh every time and you can use.

Steps

  • Cube the pork, season and set aside

  • Chop the shallots, carrots, spring onions and broccoli into small bite-size pieces

  • Cook the noodles in a pan till al dente and pour into a colander saving some noodles water

  • Heat some oil in a wok on medium - high heat and fry pork till browned

  • Once the meat is ready add the vegetables to fry and then sweet chilli sauce

  • Add the noodles to the sauce and combine

  • Its ready once the noodles is reheated

Is it me or it just seems that time seems to go really fast a lot! I have a million and one things to do but still want to eat good food! This is one I just whipped together basically with what I had in my fridge and cupboards. It is super simple - some chopping, boiling and combining - that's it, a lovely meal on your plate in 20 - 25 mins (don't cut your fingers to prove your chef skills please 😄). I love sweet chilli sauce and always have a larger bottle of it in my kitchen, I use KTC or Blue Dragon brands. It’s a quick solution to giving meals a garlic-sweet kick or making a stir-fry. The equipment you'll need are a wok, pan, chopping board, knife and a spatula. If you don't have a wok a large frying pan that distributes heat and enough space to stir will work. I love woks though and think you can get one that suits your budget - look out for my blog post on this next month!

How to make

On to the meal, cube the pork loins/steak into bitesize chunks and season with the 1 tablespoon of Chilli Flakes, paprika powder, black pepper and sea salt to taste. Let it sit to marinate whilst you do the next step, chop your vegetables as shown in the picture above. Most of the flavour will come from the vegetables and sweet chilli sauce so you do not need to over season the pork. You can either cut your carrots into circles, cubes, grate or use a potato peeler to create strips as in my picture (above).

Boil a full kettle of water and place the noodles nest in a pan for boiling. In a wok pour a little oil (1tbps approx..) on medium heat, fry your pork chops, about 2 - 3 mins on both side till brown as it does not take long to cook. Any oil of choice will do, I use vegetable, sunflower or olive oil interchangeably. Then add your shallots and broccoli and fry for 2 -3 mins. Add the carrots after the previous step if you've used a grater/peeled so it doesn't get too soft. If using fresh garlic, add at the same time you add the carrots.

Boil the noodles for about 4 mins in water. The noodles already has seasoning so I don't add salt (my preference). Follow the packet instructions for cooking to add to a stir-fry, I use Sharwood’s or Blue Dragon. You don't want over-cooked noodles as it will finish cooking in the sauce. When it has boiled and separated, pour into a sieve and rinse in cold water to stop it cooking. If you are being super lazy make sure you are ready to add to the sauce almost immediately to the sauce before draining and that way you don’t need to pour cold water on the noodles 😉 The noodles quantity will be for about 4 - 6 people depending if it’s a light lunch or main meal and any sides you might serve alongside. Remember to save half a cup of noodles water, this will be used to help the broccoli cook in the sauce later (if the sauce needs to be loosened).

In the stir-fry add your sweet chilli sauce and ensure it coats the pork and broccoli entirely. If the broccoli is still hard when you poke with a fork, add the noodles water to help it cook and cover with a lid for 3 mins. You can always increase the quantity of sauce you use allow to simmer. Check it is cooked and reduce the heat add the noodles and combine thoroughly.

That's it, it is ready to serve with your choice of sides or packed for lunch 😄If cooking ahead for lunch, allow to cool down and then serve into storage containers.
