Quick Double Chocolate & Hazelnut Homemade Ice cream

Introduction

It's blazing hot and that means one thing - ice cream! Non-churn ice cream is so easy to make and gives you all the freedom to make your favourite combo. Chocolate is heaven to me and when I want chocolate ice cream, I want it to be all chocolate with no vanilla in sight! This is double chocolate to a t, and hazelnut goodness. This can made into ice cream to serve in cones or in ice cream molds of all shapes and sizes! Extra chocolate goodness and freedom to top with whatever you fancy.

Quick Double Chocolate & Hazelnut Homemade Ice cream

Steps

  • Whip Double cream into soft peaks and set aside

  • Whisk the cream cheese, hazelnut extract, chocolate spread and salt

  • Gently combine with the double cream

  • Add in the chopped hazelnuts, chocolate spread and Ferrero rocher

  • Spread evenly in the mixture and our into your container choice

  • Scatter optional toppings if using

  • Seal and allow to freeze for minimum of 6 hours

  • Allow to sit on the kitchen counter for up to 5 - 10mins and serve with an ice cream scoop!

It is officially here, summer and a heat wave in the UK! What better way to celebrate but with a BBQ and some ice cream?! If you are becoming familiar with my recipes (thank you), you will notice there’s a trend - I love chocolate! Now I know the simplicity it is to make ice cream - making unique ice cream recipes is definitely here to stay. I still love the convenience of buying ice cream so that will not stop entirely but when I want a specific flavour - I know exactly how to make it! I am no health expert so all I provide is good tasting and exciting recipes - always make at your own discretion. This all so creamy and chocolate ice cream is a winner for me and so satisfying to make - just don’t eat so much before it gets to the freezer 😉

One of the flavours of ice cream I don’t find enough of exactly how I want it is definitely chocolate. A lot of times it’s not just right or its just chocolate coating which is not acceptable lol. So here is a recipe for anyone who feels the same as me, you are welcome 😄 As usual I try to make my recipes easy to follow so please let me know how you find this one. How to make

To start, you will need a stand or an electric hand mixer to whip the double cream into soft peaks for about 5mins on high speed for 3 mins and about 2 mins on medium. On my Kenwood stand mixer this is a 5 and then 3 setting. Transfer this to a bowl, you can use the container you will be storing the ice cream in the freezer as this will be added back into the next step. In the same mixing bowl, whisk the cream cheese, chocolate spread, hazelnut extract and salt as above. Once this is in soft peaks gently combine the double cream. There could be some sticky situations and licking at this stage lol. It’s okay to not be totally combined as random streaks through the ice cream makes it pretty and fun surprise when digging in! You do these 2 steps to add air and enhance the creaminess of the ice cream.

Add in Ferrero Rocher, hazelnut chocolate spread and chopped hazelnuts into the mixture gently carefully not to overmix. You can get pre-chopped hazelnuts from most supermarkets and saves you a job. Also, for the Ferrero Rochers, this is just roughly halved so doesn't matter if it is broken into more than 2 pieces. Then pour into an airtight container or ice cream mold anything that is freezer proof is fine and can be sealed tight. This is to make sure it doesn't have any icicles forming though the ice cream. For extra decoration, scatter optional toppings or any combination. Seal and allow to freeze for minimum of 6 hours, making sure the bowl touches the bottom of the drawer.

Once it is ready, allow to sit on the kitchen counter for up to 5 mins, serve and enjoy!

    Double cream - 300ml
    Cream cheese - 75g
    Hazelnut extract - ½ tsp
    Hazelnut Chocolate spread- 200g
    Hazelnuts - 100g chopped
    Ferrero Rocher - 5 or more
    Sea salt - 1/4 tsp (a pinch)
    Optional Toppings - Chocolate shavings, hazelnuts, Ferrero Rocher and chocolate spread
