Introduction
Crunchy exterior with a succulent flavourful interior is what you get with this delicious Japanese spiced chicken burger. Served with paprika and dill wedges this is the flavour explosion you didn't know you were missing. The star of the show here is the Japanese 7 spice from Schwartz which you can get from most large supermarkets or online. You could attempt to make the spice blend yourself but I did not as I couldn't source the seaweed sheets when I wanted.

I use chicken thighs for these burgers as they retain more moisture than breast. Bread buns and some salad you have the basis of your burger. I don't eat cheese but feel free to add this as well as some lovely homemade chips/wedges whatever shape you end up with 😃 Using Schwartz Japanese 7 spice mix definitely is a win! Very quick to prep and make in an air fryer.

Prep your burger buns
Add salad and drizzle any condiments (if using)
Take your chicken burgers and place on the bun
Top with any optional of your choice
Cover the burger with the top bun and enjoy with wedges or side of salad

The sun is here, which means more burgers! The current 10 day forecast here is hot and dry - which never happens "It will rain at some point during the day" is the norm to say here. I can't believe its almost the end of May (the best month ever)! But its been a good one, weather started off wintery but made a quick recovery for the best! This amazing Japanese spiced burger came about with left over spice I had from another recipe, but let me tell you it was the most amazing use of left over spices. This is so delicious but also simple to make. Let me tell you a secret, I don't just eat burgers in the summer but pretty much all year round using my air fryer for ease and an amazing weekend treat. But in celebration of International Hamburger day - you get this amazing recipe to try in your kitchen. I will of course share other recipes for the outdoor BBQ season but here is one for the warm night in with family or prep to take round to make at friends.
How to make
For indoor cooking, I use my air fryer very often and this recipe is one I have made time and time again. Keeping food exciting is key to me and you can use any spices you love or want to try out.
First marinate your skinless and boneless chicken thighs, I have never deboned or removed the skin from chicken. I usually buy the prepared ones from any local supermarket. If you will like to do this yourself a quick tutorial is never too far on the internet. In a medium bowl whisk the large egg and add a splash of milk (optional), add the burger spices - 3 tablespoons of the Japanese spice and add all the chicken into the bowl. You can either leave this to marinate for 30 minutes to cook immediately or in the fridge for up to 2 days if cooking later.
In a flat plate or large bowl pour the panko crumbs and remaining 1 tablespoon of Japanese spice and mix. Using a pair of tongs grab one chicken thigh at a time and place in the panko crumb mix. Turn and press into the mixture ensuring both sides are covered and packed. Place on a separate plate and repeat the previous step till all thighs are coated. You can freeze these in a complete air and moisture tight, reusable food bag with Ziplock seal on amazon. These freeze really well and I usually prep on a Saturday or Sunday for during the week or for up to 2 weeks.
If cooking immediately, allow to chill in the fridge covering with clingfilm whist you prep your wedges. Slice your potatoes long way into half, then approximately 4 - 5 medium wedge slices place in a bowl of water. Rinse and drain. In the same bowl coat, the wedges with 1 - 2 tablespoons of oil and sprinkle the seat salt, 1 teaspoon of dill and paprika and optional chilli powder, mix. This can be made by deep frying, in the oven or in the air fryer.
Place your chicken burgers in the air fryer at 180c degrees and flip halfway for about 20 - 25mins in total. This depends on the thickness of the chicken, if you have a food thermometer you can check that it is 165c degrees At the same time deep fry your wedges for 6 - 8mins at 170c degrees or in the oven at 180 degrees c for 30 - 35mins. Alternatively in your air fryer, lace your wedges in according to the fries’ settings (180 for about 15 -20mins). You could wait for the chicken to cook completely and then make your wedges or cook the wedges first and wrap in foil and keep it hot in a shut oven. If you have larger capacity air fryer, you could even cook at the same time.
Whilst these don't need attention, prepare your burger buns, add any desired condiments and salad, stack your burger patty and cover with the top bun once you are happy. I used salad cream on the lettuce, as I love the classic combination and a slice of fresh tomato as this complimented the Japanese spice so well.
