Introduction

Its May, the best month of the year, haha! Obviously a bit of bias is at play here, buts it my month and I am always a bit excited as its spring (good bye winter for good!) and its also time to celebrate. Looking forward to spending great time with my sister, friends and family in the next few days in London.
This a super delicious and a "step-up" burger that we had over Christmas, so it can be made indoors either in the oven, fry pan and we will see over the summer months if this is also one to grill! As you would have gathered by now I love warmer weather and a burger. It's pretty simple to make and adds a lovely meal option to your week.
Any excuse to see others and share food is just what I love to do. Filled tummies and hearts are an excellent recipe in my opinion 😄 No matter the weather, spending time with those you love is important and introducing new flavours makes it even better! I use salmon burgers from Costco but you can also make it from scratch in a few basic steps. as they fill me up but don't make me feel heavy, but this definitely works with all types of burger patties. Bread buns and some vegetable of choice - cucumbers, carrots, lettuce, tomatoes, and onions if you fancy. I also made these with pre cut fries but as always you can make some yourself. Spices here includes the basics, Italian herbs, chilli and you are good to go! Enjoy the weather whatever it is and most importantly time with your loved ones.

Steps

  • Marinate your burger patties with the italian herb and spice mix in oil 

  • Slice your fries and season with chilli power and salts and cook

  • Fry your burger or make it in your air fryer

  • Bake, deep or Air fry your fries

  • Prep your burger buns

  • Add salad and drizzle any condiments (if using)

  • Take your burger patties and place on the bun

  • Top with any optional of your choice

  • Cover the burger with the top bun and enjoy with fries or side of salad

This tasty Italian herbs and spiced Burgers are great for mid week or hosting friends and family and is welcomed addition to my homemade amazing meals options. Super quick to prepare as I used already formed burger patties but feel free to make these from scratch. I made these over the Christmas period as my brother has been pescatarian for a few years and wanted to make something different. This was a super easy but amazing late afternoon lunch, we will definitely these more over the coming months as I love a good burger. One bite and you are sold!

Giving the fluctuation of weather and the actual effort it takes to light a BBQ grill for a few burgers - this is one to add to indoor burgers. I fried these the first time round and then also air fried so far so either method works for a sunny weekday or weekend dinner! This is one of the other spices from the box of 4 I purchased from Spice cartel's spice mix on Amazon. Keeping food exciting is key to me and you can use any spices you love or want to try out. Changing ingredients and spices helps to give me this varieties.

How to make

First marinate your burgers patties, to do this mix the Italian spice and chilli with 1 tablespoon of oil in a small bowl. Using a brush spread the spice over all the patties on both sides and around. If you are making your own burger patties, simply chop fresh salmon fillets or throw into a food processor to make into very small piece, add yogurt or an egg into a medium bowl with the mince and spices. Mix to combine and form into 4 patties of about 3 - 4 inches high. Let it sit to marinate in the fridge for up to 2 hours or more whilst you prepare any optional sides.

For the fries, either slice your potatoes in long thin slices place in a bowl, rinse and drain. In the same bowl coat, the wedges with 1 - 2 tablespoons of oil and sprinkle the seat salt and optional chilli powder, mix. This can be made by deep frying, in the oven or in the air fryer. For the vegetables, I "Chiffonade" then, that is using a vegetable peeler making thin ribbons long side of the vegetables.

Place your burger patties on the frying pan or under the oven grill, flip halfway for about 8-10 mins in total. At the same time air or deep fry your fries for 15 - 18mins at 170 degrees c or in the oven at 180 degrees c for 25 - 30mins. You could wait for the fries to cook completely and then make your patties for 8 - 10mins.

Whilst these don't need attention, prepare your burger buns, add any desired condiments and salad, stack your burger patty and cover with the top bun once you are happy. I used mayonnaise and added chilli flakes and a bit of Italian herb for some more flavour! As usual my Amazon list is updated with the essential kitchen equipment mentioned in this recipe.
