Gbemi's Sweet Chilli Cauliflower (fried rice) with assorted meat & mixed veg

Introduction
Cauliflower rice has become a popular ingredient to cook with over the last few years. Old me would not even consider this as a option, however as I am striving to eat more vegetables it is now a no brainer option! I love this as it gives the feeling of fried rice without rice! I love rice so much but have tried over the last year to reduce the intake, especially trying to not repeat it for lunch and dinner. This meal has become a staple for lunch options in my house, as it is so easy and quick to make with a few ingredients and any left over protein of choice you may have in the fridge or freezer. As a Nigerian home chef, I tend to have assorted meats in the freezer from other meals I cook and even much so I make a conscious decision to leave a portion for meals like this.
Steps
Cut beef into cubes or shread cooked meats
Prepare the mixed vegetables, chop pepper and spring onions
Heat oil, then add vegetables, season and fry
Add the cooked meats and stir
Coat in sweet chilli sauce and allow to simmer
Add in Spring Onions, Prawns and cauliflower rice to cook

I have said it countless times now, but I will yet again - I love rice. It's a staple in my cuisine and I love how many ways it can be incorporated into dishes I make. But I also am trying to not have rice twice a day, step in Cauliflower rice! I have made this countless times over the last 2 year and is now a regular in weekly work lunches in my home. I usually make 4 servings of this for 2 days worth of lunch during the week. It is pretty quick to make with very little ingredients and a very basic cooking skill required. Simply prep the ingredients beforehand, have a wok or large frying pan and about 20mins to spare! Result a tasty, healthy and filling lunch that stores in the fridge for up to 3 days. What is there not to love. I also have shared the pictures of this meal severally, and so I dedicate this to a dear friend who asked me to send her the recipe last summer! Sorry for the super late getting back to you haha - hopefully you enjoy this as much as I do!
How to make
To cook this you need a wok or a large frying pan, spatula, chopping board, bowl and knife - that's it!
First step is to get out your assorted meat of choice, so I usually have a few pieces or turkey wings, beef or chicken pieces in the freezer. For the meats and prawns these should be cold but not frozen for cooking this meal. So get this out and shred or chop into bite sized pieces and set aside. Next defrost your prawns in cold water if required and you can use either raw or cooked prawns in the recipe.
Next prepare your mixed vegetables this could include the regulars such as green peas, sweet corn, carrots etc this should be in cubed form. I use frozen mixed vegetables (defrosted before cooking) and additional sweet corn because I can never get enough. Also slice the brown onions and spring onions into thin strips, chop your bell pepper into small cubes .
In a wok or large frying pan add oil on high heat, once hot add in the mixed vegetables, excluding the spring onions and fry till soft (onions become translucent) and season. This should take about 3 - 5mins depending on quantities and size of pan. Then add in the mixed protein of choice (excluding prawns) and fry again for 2 mins till they start to brown a bit and then add in the sweet chilli sauce.
Next stir in the spring onions, Cauliflower rice and prawns into the mixture to adsorb the flavours on a high heat for 3 mins. Reduce the heat and cover to simmer for 2 mins (or until raw prawns turn pink).
That's it, ready to serve!
- 500g Assorted meat of choice (cooked)
200g Prawns (cooked/raw)
150ml Sweet Chilli sauce
300g Cauliflower rice
250g mixed vegetables
1 yellow/green bell pepper (L)
2 tsp chilli pepper powder
2 tsp Black pepper
1tsp salt
1 stock cube (of choice)
2 stalks of spring onions
1 brown onion (M)
1 tbp oil
Optional - 250g sweetcorn, fresh chillies
