If that happens to include cooking flavourful, quick and easy meals. I am here for you. This Thai spiced dish beef with charred red peppers and fragrant brown rice is completely easy to cook. Tastes great and makes a great meal-prep option for lunch or dinner during the working week. The more time the beef has to marinate the better the flavour, to make lovely fluffy brown basmati rice, I use my rice cooker's quick function which means everything is made in 25mins! What's not to love, delicious meal made is 20mins and saves you some money ordering takeout.

How to make
To make this meal, you need a wok (or large pan) and a rice cooker for it to be super quick and easy. This keeps pots and pans to the minimal without compromising on the time limit. You also want a chopping board, knife and spoon to prep and cook this delicious meal. I use beef strips to keep the prep to the minimal, however you can buy beef for frying and cut into very thin strips.
First, marinate your beef strips in a little oil, Thai spice, salt and black pepper and set aside. This can be done up to a day ahead of cooking time for the beef to infused in the Thai flavour. You can get lovely Thai spice blends from local Asian stores or supermarkets. I also make mine when I have run out of these. Slice your peppers and onions thinly and mince the garlic.
Next. wash your rice and put it in the rice cooker with salt to taste, bay leaves and the cinnamon stick, water to cover the rice and allow to cook. With my multi-cooker, I use the quick rice setting which cooks it in about 20mins, a normal rice cooker does this at the same time. Place your wok on a medium - high heat and add oil to fry your meat, pour the beef strips in and brown on all sides for 6 - 8mins. Remove from the pan, juices and all in a bowl or the lid of your wok.
In the same pan fry your onions and pepper for about 3mins till it starts to char and then add the minced garlic and fry for about 1 minute. Add in the tinned chopped tomatoes and increase the heat to high for 3mins. Add in the spice, start with 2 tablespoons and taste before adding more. Depending on the intensity of the spice you have you may not need the last tablespoon. Add the beef and stock back into the pan and allow to simmer for 5mins with the lid on.
Check, you rice it should be done and ready to be added your sauce. Be careful to lifting the hot bowl from the cooker and toss all the rice in the wok. Mix thoroughly on a medium heat and allow to cook for a further 5mins.
Once this is done, your meal is ready! If cooking ahead for lunch, allow to cool down and then serve into storage containers. Otherwise serve on a plate with a side of salad and dodo immediately.
