Easy New York Buffalo Chicken Wrap

Introduction
A quick, tasty and filling mid-week meal ready in 15mins! This is so easy to make and can swap the main flavours to keep it exciting. The key to keeping this fast and stress-free is some store-bought salad and any wrap of choice - flour, tortilla or wholemeal! This will definitely beat your store-bought wrap and you have full control of what goes in - so it’s a win-win! Did I mention I am not a fan of cold food, so on a selfish note this means I can have a warm wrap 😂
Steps
Marinate your chicken
Grill your chicken with the halved shallot
Mash your avocado with garlic puree
Prep your wrap
Spread the avocado paste on the wrap
Add salad and a drizzle of salad cream (if using)
Take chicken and shallots out of the oven and roughly shred
Add the shredded chicken and shallots to wrap
Fold wrap and enjoy with a side of salad or sweet potatoes

This wrap is what allows me to claim I eat 'sandwiches' as am not a fan of cold food. I tend to see a store-bought premade sandwich as my ultimate last resort! The ability to season the chicken to my taste and spend less is a win-win. As a young professional I do have to find quick meals that I can prep at the weekend and take to work (when that's a thing again) or easily warm up at lunch time.
So, there are 2 options for if this is to be taken to your office or if you are still working from home. Either way there is little prep with the pre-cut bag of salad and deboned skinless chicken thighs.
How to make
First cut your chicken into 2 thick strips (cut along the long side), pop in a Ziplock bag/bowl, drizzle a little oil and mix. Then season the chicken with the buffalo spice, garlic salt and black pepper. Let it sit to marinate whilst you do the next step.
1. If you are working from home and want this fresh on the day, pop the marinated chicken into the
fridge.
2. If taking it to work, then grill the chicken as directed below and put a portion in a food container and
have some salad (without dressing in a bag). Simply warm the wrap at lunch time and assemble
(you should ideally be eating away from your screen 😉). For the avocado (half), best to store in
tightly wrapped cling film. Don't forget any dressing if desired!
Do the next step on the day you’re ready, the chicken will keep fresh for a few days in the fridge and also freezes well (defrost in the fridge the night before).
Put the grill on, place your chicken with the halved shallots in an oven tray and pop under the grill for 8-10 minutes. Whilst this is cooking, slice and place avocado in a small bowl and mix in the garlic puree to make a paste. Heat your wrap in the microwave (according to the package instructions) and spread 1/4 of garlic-avocado paste across the centre of the wrap.
Top this with a handful of more of your desired salad and drizzle salad cream over the salad. I have chosen to use premade salad mix to cut out time spent to make this but if you want to make yours, you are welcome to.
Check your chicken thighs and flip the chicken to the other side halfway through. It should be ready in 8 minutes, poke with a fork and the juices will run clear if cooked. Once cooked, bring it out of the oven and shred roughly with a fork and knife in the tray. Place 1/4 of the chicken thighs and shallots on the salad bed and fold your wrap.
You can have this on its own and is quite filling or it can be paired with sweet potato fries or side salad.
