What I'll be cooking through the Christmas holidays

Its almost Christmas day, which means a number of things, this year has gone super quick and I haven't posted as much. Well life happens and I am not beating myself up about it!

I'm super excited for Christmas this year as I get to spend time with loved ones in the US and stuff their faces. Luckily for them I love to cook and its my way to express love so no one else has to stress over the holidays on what to eat!

I usually have 10 or so days off at Christmas so it means I wake up wanting to make breakfast and spend time creating a feast for later in the day. My general deciding factor for breakfast is if its a sweet or savoury dish and the benefit of more time to spend than the standard breakfast during busier times in the year. If you didn't know already, breakfast is very important start to my days so do check out some of the recipes I've shared on my blog 😊.

For breakfast it is usually something like pancakes, french toast for sweet and a classic full English breakfast, or yam with eggs or omelette with choice of bread (have I mentioned my mum and I have a bread obsession? (my latest being sourdough). Now I should say I enjoy a late start to the mornings, so breakfast could very much be brunch when ready.

So for the next meal this tends to be a really late lunch or early dinner which is usually filling or plenty for seconds for anyone who wants to indulge. For this I would make a variety of meals throughout the week including Jollof rice and fried rice which always make it on the main day with all the trimmings - dodo, chicken, coleslaw, moin moin. Other meals will usually involve many experiments- those passing the test making it onto the regular menu during the weeks and months to come. Also dishes with some type of fish, lamb chops and sweet potatoes are always found in the kitchen. This year we will be having salmon fillets and burgers so do look out for more recipes in the new year, I have also written two recipes in the past to check out.

Lastly there are usually a variety of treats on offer including my sausage rolls, cakes (cheesecake, fruit cake and possibly a lemon almond cake I love). I go all out and thoroughly enjoy celebrating Christmas and time with family through food. So if you are looking for me over the Christmas period, I will be in a kitchen and will try my very best to capture the dishes I make!

I hope you have an amazing Christmas, celebrating the gift of Jesus and spending great time with loved ones.

Till the new year, happy cooking and do comment below if there are any must-have dishes in your family.
